Life has been so less stressful lately…..I’ve had more time to read books and garden since it’s been so nice outside. Why is my life less stressful you might ask? It’s because I don’t have to plan dinner every night and I forward Charlie the e-mails I get from What’s 4 Dinner Portland? and he picks up the ingredients from the grocery store.

This blog is for all of the parents out there! If I had a penny for every time Charlie asked me “what’s for dinner mom?” then I wouldn’t have to collect social security. It’s nice to not have to worry about that at the end of the day and now I can forward the e-mail to Charlie and have him pick up the groceries on his way over to my house. The recipes are always delicious, well compared to my cooking before… Today’s recipe is Paella and boy does it look good!

With Charlie being an only child he is definitely a mama’s boy, well at least he is when I can get him to call me back…. This causes problems when he gets a new girlfriend. He’s been living with “friend” but he recently told me they were dating. I knew the entire time that they were dating! How did I know?

Charlie and his new girlfriend, or “roommate” at the time, came to my house for dinner one night. His girlfriend made delicious liver and onions but there were some left overs so she left her nice glass dish at my house. I promptly returned it to their home the next time I visited. Charlie kept calling me and leaving me the most horrid voice mails saying I needed to return the glass dish and that I couldn’t steal from his “roommate” I didn’t call him back. Then he called me again telling me that it was his “roommate’s” grandmother’s dish and that she really really needs it back. I called Charlie back and asked him if she was his girlfriend and he denied it. Hear that girlfriend?!? He denied it! Well I proceeded to inform Charlie that the dish is in his “roommate’s” bed. That’s when he told me they had just started dating.

I’m watching you Charlie!

I ate way too much fruitcake….and chocolate, eggnog, ham, scallop potatoes, pumpkin pie, cheesecake and corn. I’ve been in bed since Christmas Day. I’ve only been eating leftovers since then and I can’t figure out why I’m still sick! For many years fruitcake has been ridiculed, thrown out, and spit out. Well times have changed and now it’s back and better than ever! Well if you can’t tell, I haven’t blogged since July! Why? Because I am computer illiterate! I thought I was doing really well and blogging every few weeks. Well actually I was e-mailing my son Charlie and he just wrote me back asking why I was e-mailing him about fruitcake. Darn computers!!

When Charlie was a baby I would have to say that I was an inspiration for the other neighborhood Mom’s! I could throw a great party. I thought I should share my party tricks because everybody needs some help. Charlie never can throw a good party. He needs the help… I tell him over and over again that if he would let me help it would be the best party he ever had.

Once again, when deciding on food, remember – think classy! If your idea of cheese does not come out of a can, you’re not thinking hard enough. For authentic classy flavor, be sure to buy generic or store brand food. Not only does it capture the true flavors, it’s also less expensive. We all need to watch our pennies.

Be sure to serve on paper plates with plastic ware. Sporks are even better. You can pick this up at your local KFC. 

Selected Menu Items:

  • Squeeze Cheese/Squirt Cheese and saltines
  • Vienna Sausages wrapped in American cheese. Slice and spear with toothpick
  • Spam-kabobs (a little fancy sometimes – make sure you customize your menu to your guests)
  • Lots of chips (especially BBQ flavor) No baked kind either! GROSS…. and Pretzels are for wussies
  • Pork Rinds
  • Beanie-Weenie casserole
  • Jello molds with mini marshmallows and plates of twinkies.
  • Pickled eggs with my special ingredient – a splash of Cooking Sherry

Basic rule of thumb… the food should be generally good looking to the eye. Any questions about throwing a classy neighborhood shin dig. Just email me. Charlie had Davis’s people set up this email thing for me. I guess it something like writing a note. I’m new at it. But, Aunt Linda and I can figure it out.  Speaking of Aunt Linda, she’s on her way to pick me up. I better get going and fix my hair. We’re having dinner at the Sandy Hut and I need to be all put together. We love that place! Everybody is so nice. Cheers!!!
